This spicy and delicious wfpb cauliflower-based queso is perfect for dipping or pouring over french fries, baked potatoes, or taco bowls. And the best part is it's super easy to make!
Ingredients
2 cups cooked cauliflower
1/2 red pepper (roughly chopped)
1/3 cup red onion (roughly chopped)
2 garlic cloves
1/4 cup raw almonds (soaked in boiling water for 1/2 hour)
2 tbsp almond butter
2 tbsp apple cider vinegar
2 tbsp nutritional yeast
1 tsp sea salt
1 tsp cumin
1/2 tsp turmeric
1/4 tsp cayenne
Juice from 1/2 lemon
1/4 cup water
Instructions
Combine all ingredients in a blender and blend until smooth. Serve warm or cold. That's it--enjoy!
